Who doesn’t love roast nuts, and adding a bit of spice will bring some festive warmth to this more-ish party snack. You can play around with the spices used, and either keep it very simple with salt and smoked paprika or add some chilli heat or festive warmth with Christmassy cinnamon or similar spices.

250 g Almonds
1 tsp SuperValu Chilli Powder
1 tbsp SuperValu Olive Oil
1 tsp SuperValu Paprika
2 tsp SuperValu Salt
(as opposed to fine table salt)
1 tsp Supervalu Ground Cumin
coriander and/or cinnamon (optional)
- Preheat oven to 180ºC/350ºF/Gas 4.
- Spread the nuts evenly on a pre-heated baking tray. Lightly drizzle with oil, tossing as you go. You want to use enough to coat them without overdoing it so add the oil little by little until you have enough. Once lightly coated, sprinkle evenly with the salt and spices, again aiming to season evenly.
- Toss well and transfer to pre-heated oven. Roast for 8–12 minutes, tossing a couple of times to ensure even cooking. Keep a close eye on them for the last few minutes as they can burn easily. They’re done when they start to brown and smell gorgeously nutty.
- Remove from the oven and transfer to baking parchment to cool.
