This is a great dish to bring to a get together. Prep everything in this zinging summer salad beforehand, then combine at the last minute before you dash out the door.

200 g Green Beans
300 g Smoked Trout
100 g SuperValu Bean Sprouts
1 tbsp SuperValu Fresh Parsley Flat Leaf
2 - SuperValu Scallions
ends trimmed and thinly sliced lengthways
- Bring a small pot of water to the boil, then add the green beans and cook for 3 to 4 minutes. Drain and place in a bowl of ice water to stop the cooking. Drain again, then place in a large mixing bowl.
- Add the beansprouts, carrot, scallions and parsley to the green beans and gently toss to combine.
- To make the dressing, place the lemon juice and tahini in a small bowl and whisk briskly until smooth. Add the sesame seeds, soy sauce and honey and whisk again until well combined. Drizzle over the salad and gently toss, then fold the trout through the salad.
- Divide the salad and the trout evenly among four plates and serve immediately.
