Martin fish horseradish crusted salmon

RECIPE OVERVIEW

This is a lovely and simple way to cook salmon. Serve with a side salad for a quick and healthy meal. 

Preparation time: 10 minutes

Cooking time: 15 minutes

Ingredients

Serves: 4 people

  • 1 pinch Black Pepper
  • 1 tbsp Horseradish
  • 3 tbsp Olive Oil
  • 1 pinch Salt
  • 110 g SuperValu Fresh Breadcrumbs
  • 1 tbsp SuperValu Fresh Parsley Flat Leaf
    chopped
  • 4 - SuperValu Fresh Salmon Darnes
    (150g each)
  • 1 bag SuperValu Mixed Salad Leaves
  • 50 g SuperValu Smoked Salmon
    cut into small pieces
  • 1 tbsp SuperValu White Wine Vinegar

Method

  1. Preheat the oven to 180oC /gas mark 4. Grease a baking tray with oil.
  2. Season the salmon with salt and pepper and place on the oiled tray.
  3. Combine the breadcrumbs, smoked salmon, parsley,horseradish cream and 1 tablespoon of the oil in a small bowl.
  4. Top the salmon with the breadcrumb mixture, pressing it gently to help it adhere. Bake in the oven for 12 to 14 minutes, until cooked through.
  5. In a medium bowl, toss together the salad leaves, vinegar and the remaining 2 tablespoons of oil and season generously. Serbe with the cooked salmon.
