Method

  1. There's no need to peel the beetroot if you scrub it well. Simply place all the ingredients in a blender and blitz for 1 minute, until completely smooth and creamy. 
  2. This can be made in advance and stored in the fridge overnight for a grab-and-go breakfast - just give it a stir before serving.

LIGHTEN UP

Fresh fruit is bursting with goodness, but do keep in mind that it’s also high in sugar too, even though it’s natural sugar.
