  1. Place the two lots of potato (cubed) into a pot with the onion and leave to sweat on a medium heat for around 10 minutes, then add in the celery.
  2. Cover with the 2 pints of chicken stock, bring to boil and leave to simmer for 40 mins or until soft.
  3. When cool remove the onion, then add the fresh coriander and liquidise.
  4. Serve with a dollop of cream and a fresh baguette.
