This is a soft French Brie, bursting with the rustic flavours you would expect from a cheese made with cow’s milk. Runny when ripe, it is best enjoyed with a robust fruit paste, made with quince or figs. Try it with a glass of good Sauvignon Blanc if you feel like enjoying a combination of two iconic French tastes.
Traditionally this cheese has been paired with sherry and port wine. It also goes very well with walnuts, biscuits, breads and crackers.
