
RECIPE OVERVIEW
Serve this banana oat bake with yoghurt, nut butter and mixed fruit for a delicious, guilt free breakfast.

1 - Banana
chopped -
1 tbsp Butter
melted, or melted coconut oil -
3 tbsp Fresh Blueberries
(optional) -
2 tsp Ground Cinnamon

1 tbsp Honey
-
200 g Jumbo Oats
-
400 ml Milk
or almond milk -
1 pinch Salt
-
3 tbsp SuperValu Goodness Flaked Almonds

1 tsp Vanilla Extract
To Serve
-
1 bunch Mixed Berries
-
2 tbsp Natural Yogurt
-
2 tbsp Peanut Butter
or any nut butter
Method
- Preheat the oven to 200oC/gas mark 6.
- Place the oats, milk, butter/coconut oil, honey, vanilla and a pinch of salt in a mixing bowl and stir well to combine. Transfer to a glass baking dish and sprinkle the cinnamon on top, then scatter over the chopped banana. Finish with the flaked almonds and blueberries, if using.
- Bake in the oven for 25 minutes, until nicely browned. Top with mixed berries, nut butter or natural yogurt.
