  • 2 tbsp Cocoa Powder
  • 3 - Eggs
  • 85 g Golden Caster Sugar
  • 85 g SuperValu Self-Raising Flour

For the Filling & Icing:

  • 50 g Butter
  • 1 tbsp Cocoa Powder
  • 140 g Dark Chocolate , broken into squares
  • 280 ml Double Cream
  • 200 g Icing Sugar


  1. Preheat oven to 200C / 180C fan / Gas 6.
  2. Butter and line a 23 x 32cm swiss roll tin.
  3. Beat the eggs and caster sugar together with an electric whisk or handheld mixer for 5 minutes until pale and fluffy.
  4. Combine the cocoa powder and flour together and sift into the egg mixture.
  5. Carefully fold together and pour the mixture into the prepared tin, bake for 10 minutes.
  6. Lay a sheet of parchment paper down and tip out the Swiss roll, remove parchment paper from the back and roll from the long end into a loose roll.
  7. Allow to cool completely.
  8. Whisk the cream until it holds its shape, then unravel the cake and spread the cream over the top and carefully roll it up again.
  9. To make the frosting, melt the chocolate, cocoa powder and butter, add the icing powder and gradually whisk together.
  10. Once combined, add the cream and beat for 5 minutes.
  11. Cut a thick diagonal slice from the log and arrange it to the side like a branch.
  12. Spread the frosting on top and create a bark finish with long strokes using the back of a spoon.
  13. Decorate with fresh holly and refrigerate until needed.
