Maple Glazed Irish Turkey Parcel with Cranberry Gravy

If you prefer a smaller joint this Christmas, this is a tasty alternative to a full turkey.

Ingredients

  • 2 tbsp Butter
  • 2 - Carrots chopped
  • 600 ml Chicken Stock or SuperValu Signature Tastes Gravy
  • 4 cloves Garlic sliced
  • 2 - Onion chopped
  • 3 sprigs Sage
  • 1 pinch Salt and Pepper
  • 2 tbsp SuperValu Signature Tastes Cranberry and Port Relish
  • 1 - SuperValu Signature Tastes Turkey Parcel 1.8kg
  • 100 ml White Wine optional
  • 300 g chicken wings
  • 1 tbsp flour
  • 4 sprigs rosemary

Method

  1. Preheat the oven to 180C
  2. Place the carrots, onion, garlic, rosemary, sage and chicken wings on a roasting tray. 
    Add the Turkey Parcel, drizzle with maple syrup and season with salt and pepper, then roast for 60 minutes until cooked through. 
  3. Remove the turkey from the roasting tray and set it aside, covered with a tent of foil. 
  4. Meanwhile, place the roasting tray back on the hob over medium heat and prepare the gravy. 
  5. Sprinkle some flour over the vegetables and chicken wings and cook for 30-40 seconds. 
  6. Add some white wine and chicken stock, then stir to catch all the caramelised flavour from the roasting tray.
  7. Simmer for two minutes and pass through a sieve into a small saucepan. 
  8. Stir in the cranberry sauce and the butter. Check the seasoning and keep warm, then carve the turkey and serve with the cranberry gravy.
  9. Enjoy with your favourite side vegetables.
