Jess's Cauliflower Cheese Flat Iron with Brussel Sprout Slaw

Leftovers at Christmas are the star of the show and my favourite part of Christmas dinner is the cauliflower cheese. When you already have the sliced pan on hand for turkey sandwiches, why not give the cauliflower cheese leftovers a glow up too?

50gCheddar Cheese
SuperValu Signature Tastes White Cheddar
50gMozzarella
30gRocket
1dropSuperValu Signature Tastes Red Onion Relish
2slicesWhite Batch Bread
1 - cauliflower

Method
Preheat your toasted sandwich maker. Cut two thick slices from your loaf of bread. Butter both sides and then evenly distribute the cauliflower cheese over one of the slices to make sure it all heats up at the same time.
Add some white cheddar and grated mozzarella for the stretch and press it down into the toasted sandwich maker.
Into your brussels sprouts leftovers from Christmas dinner, toss in your blue cheese ranch leftover from Christmas eve adobo wings.
Serve with carmelised red onion relish, sprouts, and some peppery rocket on the side.
