Barbecued Irish Ham with Three Fruit Marmalade Glaze

Ingredients

10gCloves
1 - Onion

Method
Place the ham in a large heavy-based saucepan, and add the studded onion, carrots, and bay leaf. Add enough water to cover the ham completely, then bring to a boil and reduce the heat to simmer for about 130 minutes (20-25 minutes per 500g ). Remove from the heat and allow the ham to cool in the cooking liquor. Optional: This step could be complete a day in advance and refrigerated overnight.
Preheat a charcoal barbecue to around a 150˚C – 170C.
Place the cooled boiled ham on a roasting tray. Using a sharp knife, carefully remove the skin from the ham, then gently score the fat. Stud the ham with cloves.
Spread the marmalade glaze over the ham with a spoon and sprinkle with brown sugar.
Barbecue over indirect heat for 20-25 minutes until golden brown, then remove from the barbecue and let it rest for 10 minutes covered with a tent of foil.
