  • 100 g Bamboo Shoots canned
  • 1.5 tbsp Curry Paste
  • 0.5 can Light Coconut Milk (200g)
  • 170 g Pak Choi
  • 2 tbsp Reduced Salt Soy Sauce
  • 1.5 tbsp Rice Vinegar
  • 1 bunch SuperValu Fresh Coriander
  • 5 g SuperValu Goodness Mixed Nuts unsalted, chopped
  • 200 g Tofu drained and cubed
  • 60 g Wholegrain Rice


  1. Place rice in a pot of water, bring to boil. Reduce heat and allow to simmer until light and fluffy.
  2. In a bowl add the coriander, curry paste, rice vinegar, and coconut milk. Use a hand blender to blend until smooth.
  3. Place the curry mixture and tofu in a wok and bring to the boil. Stir gently.
  4. Add bamboo shoots, pak choi, and 1.5 tsp soy sauce. Reduce heat to medium and allow to simmer for 5 - 6 minutes.
  5. Serve the curry with rice.
  6. Drizzle each serving with remaining soy sauce and sprinkle with nuts.
