Pickled Cucumber, Smoked Salmon and Brown Bread

This dish is so easy to prepare and is an ideal snack for breakfast or lunch.

Rice Vinegar

Water
Method
The night before, bring to boil in a saucepan the rice vinegar, water and sugar together.
Simmer for 2 minutes and remove from the heat. Add the cucumber, red onion and coriander seeds.
Set aside until cooled and pickled.
Serve the pickled cucumber with brown bread slices, room temperature butter and smoked salmon.
