This is easy to prepare on a Sunday evening ahead of a busy week. Once made, it’s just a case of grabbing it from the fridge and enjoying.
1. Combine the yogurt, coconut milk and vanilla extract in a small bowl.
2. Layer the oats, chia seeds, yogurt mixture and blueberries
between four jars. Finish the jars with a few fresh blueberries and screw on the lids. Chill overnight in the fridge.
3. It will be ready to enjoy in the morning, though it keeps for up to three days in the fridge. Top with a little granola for some extra crunch and a few extra blueberries or a spoonful of jam if desired. A sprig of mint.
A note on oats:
Pure, gluten free oats are available and some coeliacs can use them without problems. However a percentage of coeliacs will still react negatively to them, therefore we recommend the following precautions:
Do not use OATS when newly diagnosed until antibodies have gone down to normal (Can take 1-2 years after starting diet); if you have raised tTG antibodies or when you have gastroenteritis.
