This is perfect to go with a lamb dish and it is so simple to prepare.

  • 1 tbsp Caster Sugar
  • 4 tbsp Cider Vinegar or white wine vinegar
  • 1 pinch Salt
  • 1 handfull SuperValu Fresh Mint stripped off the stalks and chopped up roughly
  • 4 tbsp Water boiled


  1. Pour the boiling water over the mint.
  2. Allow to infuse and then add vinegar and sugar.

*You can add it to redcurrant jelly too if you like!
