Wholewheat Spaghetti
Method
In a pot of boiling water, add spaghetti and cook for 10 mins.
In a large saucepan heat oil and then add onion, carrot, celery and garlic. Cook on a low heat for 10 minutes until all the vegetables are soft.
Add the lentils, chopped tomatoes, purée, oregano, bay leaf and vegetable stock. Simmer for 30 minutes until lentils are tender.
Serve spaghetti with the lentil bolognese.
