Description
Some date this Italian soft cheese back to the 10th century. It is made in the Val Taleggio region of Italy, in the province of Bergamo. The cheese was traditionally matured in Alpine caves, deriving its unique flavour from the bacteria that thrived up there. Despite a very strong smell, Taleggio is actually mild flavoured with fruity and nutty notes. Deliciously creamy if you melt it on top of your lasagne or pasta dish, it also works beautifully with a radicchio or rocket salad.
Pairing Recommendations
When sliced and added to the top of hot dishes it melts into an appetising cream. When grated on salads such as radicchio and rucola, it tastes lovely as the cheese melts. Taleggio is a great cooking cheese as it melts easily and maintains its flavour when cooked. Taleggio is an excellent option for the cheeseboard.
