This is a lovely variation on the simple porridge recipe, i do recommend that the blueberries are gently folded in at the last minute, or just scattered on top - otherwise you may not get the expected results!

Ingredients

  • 100 g Fresh Blueberries
  • 400 g Milk
  • 200 g Porridge Oats
  • 1 - SuperValu Granny Smith Apples peeled and cut into matchsticks
  • 2 tsp SuperValu Honey Optional

Method

  1. Prepare the porridge by pouring the milk into a pan and heating over a medium heat. Add the oats and a pinch of salt and bring to the boil.
  2. Reduce the heat to a simmer, and stir occasionally with a wooden spoon for a further 6 – 8 minutes, until the porridge coats the back of the wooden spoon.

  3. Remove from the heat and fold in half the blueberries. Add a spoonful of the apple sticks, then scatter with some blueberries and drizzle with a little honey. Serve immediately.

 

TOP TIP:  There are so many different variations of porridge such as banana & cinnamon, stewed rhubarb, nuts and dates, fruit compotes and super seeds like flaxseed and linseed, so give it a try, you might be pleasantly surprised.
