Breda Maher rises at 6:00 am every morning to tend to the family farm in Tipperary. Her herd of Friesian cows happily graze on the lush grass that gives the cheese its distinctive flavour. Cooleeney cheese is made right there with milk that only has to travel about 50 few yards to be churned, making it as fresh and natural as possible.
Breda loves creating rich, complex and delicious cheeses for SuperValu’s Signature Tastes range and sees her role in doing so as a lifestyle rather than a job. It’s family affair with her son Pat overseeing the milk production and Breda keeping an eye on quality control. The family has been farming this rich plot of peaty Tipperary soil for four generations with Breda honing her craft over twenty-six years.
