While your cooked steak is resting...
- Tip in vinegar to deglaze the pan and allow to bubble for a few seconds.
- Pour in stock.
- Reduce by half.
- Add the cream, some salt if needed, and lots of black pepper.
- Cook for 1-2 minutes until thick and creamy.
