Smoked salmon brown bread recipe


This dish is so easy to prepare and is an ideal snack for breakfast or lunch.

Preparation time: 10 minutes

Cooking time: 10 minutes


Serves: 2 people

  • 20 g Butter
  • 50 g Caster Sugar
  • 1 tbsp Coriander Seed
  • 1 - Cucumber
    sliced or peeled
  • 4 slices Gluten Free Brown Bread
  • 0.5 - Red Onion
    finely diced
  • 100 ml Rice Vinegar
  • 300 g SuperValu Smoked Salmon
  • 100 ml Water


  1. The night before, bring to boil in a saucepan the rice vinegar, water and sugar together.
  2. Simmer for 2 minutes and remove from the heat. Add the cucumber, red onion and coriander seeds.
  3. Set aside until cooled and pickled.
  4. Serve the pickled cucumber with brown bread slices, room temperature butter and smoked salmon.
