This dish is so easy to prepare and is an ideal snack for breakfast or lunch.
Serves: 2 people
20 g Butter
50 g Caster Sugar
1 tbsp Coriander Seed
1 - Cucumber
sliced or peeled
4 slices Gluten Free Brown Bread
0.5 - Red Onion
100 ml Rice Vinegar
300 g SuperValu Smoked Salmon
100 ml Water
- The night before, bring to boil in a saucepan the rice vinegar, water and sugar together.
- Simmer for 2 minutes and remove from the heat. Add the cucumber, red onion and coriander seeds.
- Set aside until cooled and pickled.
- Serve the pickled cucumber with brown bread slices, room temperature butter and smoked salmon.
