Operation Transformation Recipe

Ingredients

Serves: 2 people

  • 200 g Carrots
    peeled and sliced
  • 400 g Chickpeas
    tin drained 230g
  • 0.25 tsp Chilli Powder
  • 200 g Chopped Tomatoes
    canned
  • 2 cloves Garlic
    chopped
  • 1 tsp Ground Cumin
  • 1 tsp Lemon
    zest
  • 1 tbsp Rapeseed Oil
  • 1 - Red Onion
    diced
  • 1 bunch SuperValu Fresh Coriander
    chopped
  • 200 g SuperValu Potatoes
    peeled and chopped
  • 500 ml Vegetable Stock

Method

  1. Add oil into a pan over medium to high heat.
  2. Add the onions and cook until tender.
  3. Add carrots and garlic and cook for 2 - 5 minutes stirring occasionally.
  4. Now add the cumin, chilli powder , chicken stock, chickpeas, tomatoes, lemon zest and potatoes.
  5. Simmer for 20 - 25 minutes until potatoes are cooked through.
  6. Top with coriander and serve hot.

    This went down very well with the family both vegetarians and meat eaters. Now it is a regular weekly dinner for us.
