Method
- In a pot of boiling water, add spaghetti and cook for 10 mins.
- In a large saucepan heat oil and then add onion, carrot, celery and garlic. Cook on a low heat for 10 minutes until all the vegetables are soft.
- Add the lentils, chopped tomatoes, purée, oregano, bay leaf and vegetable stock. Simmer for 30 minutes until lentils are tender.
- Serve spaghetti with the lentil bolognese.
