Operation Transformation Recipe

Ingredients

Serves: 2 people

  • 1 - Bay Leaves
  • 1 - Carrots
    chopped
  • 1 stick Celery
    chopped
  • 200 g Chopped Tomatoes
    tinned
  • 1 clove Garlic
    chopped
  • 1 small Onion
    chopped
  • 1 tbsp Rapeseed Oil
  • 130 g Red Lentils
  • 1 tsp SuperValu Oregano
    dried
  • 1 tbsp SuperValu Tomato Purée
  • 375 ml Vegetable Stock
  • 100 g Wholewheat Spaghetti

Method

  1. In a pot of boiling water, add spaghetti and cook for 10 mins.
  2. In a large saucepan heat oil and then add onion, carrot, celery and garlic. Cook on a low heat for 10 minutes until all the vegetables are soft.
  3. Add the lentils, chopped tomatoes, purée, oregano, bay leaf and vegetable stock. Simmer for 30 minutes until lentils are tender.
  4. Serve spaghetti with the lentil bolognese.
