2 tbsp Mayonnaise
1 - Red Onion
1 - SuperValu Avocado
Stone removed, thinly sliced
4 - SuperValu Burger Buns
4 - SuperValu Fresh Chicken Fillets
1 tbsp SuperValu Olive Oil
100 g SuperValu Rocket Leaves
0 - SuperValu Salt
8 - SuperValu Streaky Bacon Rashers
2 - SuperValu Tomato
2 tbsp Tomato Ketchup
- Preheat the oven to 180°C/350°F/ Gas Mark 4. Lay the bacon onto a baking tray and place in a preheated oven for 8 to 10 minutes, turning once during the cooking process. Remove and set aside.
- Place the chicken fillets between 2 sheets of cling film and using a rolling pin gently pound to about 1cm thick. Drizzle a little oil onto a griddle pan and cook the chicken fillets for 4 to 5 minutes on each side. Season with a little salt and pepper.
- Place the burger buns onto a baking sheet and place in the oven until warmed, about 2 to 3 minutes. Remove and build your burger.
- Spoon a little mayonnaise onto the base of each burger, then add a layer of rocket, onion, tomato and avocado. Top with the chicken fillet and 2 slices of bacon. Spread some ketchup onto the top half of the burger bun and place on top of the bacon. Serve immediately.
