Whizz the pink watermelon flesh with some honey in a blender. Make sure you over sweeten it a bit because some of the sweetness will be lost when the ice pops freeze. Add in the coconut and mix well.
Pour into ice pop moulds and place in the freezer. Insert the ice pop sticks after 30 minutes, when the mixture is firm enough to hold them, and return to the freezer until solid.
