Ingredients

Serves: 4 people

  • 75 g Light Muscovado Sugar
  • 2 - Onions
    Thinly Sliced
  • 2 tbsp Rice Vinegar
  • 1 tsp SuperValu Chilli Flakes
  • 1 tbsp SuperValu Cornflour
  • 1 - SuperValu Fresh Coriander
  • 2 cm SuperValu Fresh Ginger
    Finely Chopped
  • 3 cloves SuperValu Garlic
    Finely Chopped
  • 1 tbsp SuperValu Goodness Sesame Seeds
  • 1 - SuperValu Orange
    Zest and Juice
  • 400 g SuperValu Quality Irish Eye of Pork Loin
    Shredded
  • 200 g SuperValu Rice
  • 100 mls SuperValu Soy Sauce
  • 2 drops Tabasco Sauce
  • 2 tbsp Water

Method

  1. Cook the rice as per the packet instructions. Drain and set aside.

  2. Whisk together the soy sauce, brown sugar, garlic, orange zest and juice, ginger, vinegar, chilli  flakes
    and Tabasco in a bowl, then pour into a pan. Whisk together the water and corn flour in a separate small
    bowl, then pour it into the sauce.Whisk the sauce over a medium-high heat until it’s bubbling and thickened.

  3. Place the pork in a bowl. Pour the sauce over the shredded pork.

  4. Pour the cooked rice into a large bowl and add the pork. Add the spring onions, sesame seeds and coriander and stir to combine. Garnish with more fresh coriander leaves. Serve warm or cold.
