Claire cucumber buttermilk


This refreshing, no cook soup requires very few ingredients and is perfect for summer. 

Preparation time: 10 minutes

Serves: 6 people

  • 1 tsp Caster Sugar
  • 1 - Cucumber
    peeled and chopped
  • 1 tbsp Lemon
  • 1 drop Olive Oil
  • 0.5 tsp Salt
  • 750 ml SuperValu Buttermilk
  • 1 bunch SuperValu Fresh Dill
    to garnish
  • 75 ml SuperValu Sour Cream
  • 1 pinch White Pepper


  1. Make 6 frozen olive oil cubes by pouring the oil into an ice cube tray and freezing overnight.
  2. Blend the cucumber, buttermilk, sour cream, lemon juice, sugar, salt and white pepper until smooth in a blender. Cover and refrigerate for about 1 hour, until cold.
  3. Pour the soup into bowls. Add an olive oil ice cube to each bowl.
