Turkey pie couscous topping recipe Turkey pie couscous topping recipe

I stumbled across this recipe one evening when I thought I had nothing in the kitchen, but by using some store cupboard staples, I made this really tasty, healthy pie.

Ingredients

  • 3 - Bacon Rashers diced
  • 1 pinch Black Pepper
  • 400 g Chopped Tomatoes
  • 150 g Couscous
  • 1 tbsp Olive Oil
  • 1 large Onion diced
  • 2 tsp Paprika
  • 1 - Red Pepper diced
  • 1 pinch Salt
  • 1 large SuperValu Courgette diced
  • 30 g SuperValu Parmesan Cheese Shavings
  • 2 tbsp SuperValu Tomato Purée
  • 500 g SuperValu Turkey Mince (or leftover cooked, diced turkey)
  • 200 ml Vegetable Stock hot
  • 1 - Yellow Pepper diced

Method

1. Preheat the grill to medium.

2. Place the couscous in a heatproof bowl and pour over the hot vegetable stock. Cover the bowl tightly with cling film and set aside until all the stock has been absorbed, then fluff up the couscous with a fork.

3. Meanwhile, heat the oil in a frying pan set over a medium heat. Add the turkey mince and bacon and fry off until the mince is browned and the rashers are cooked through. Add the onion, courgette, peppers, chopped tomatoes, tomato purée, paprika and a pinch of salt and pepper. If using leftover turkey, add it now too. Fry for about 10 minutes, until the veg have softened.

4. Transfer the turkey mixture to a pie dish or baking dish, then spoon over the couscous in an even layer to create the topping. Sprinkle the top of the pie with the grated Parmesan, then place under the grill for 2 to 3 minutes, until the couscous topping is brown and crisp. Serve straight to the table.

Tip: Feel free to use up any veg that you have hanging around.
