Couscous salad recipe

RECIPE OVERVIEW

This quick couscous salad is the perfect summer side.

Preparation time: 5 minutes

Cooking time: 10 minutes

Ingredients

Serves: 4 people

  • 1 pinch Black Pepper
  • 4 tbsp Cider Vinegar
  • 400 g Couscous
  • 1 - Cucumber
    diced
  • 1 - Lime
    zest and juice
  • 1 pinch Salt
  • 1 tsp SuperValu Chilli Flakes
  • 5 tbsp SuperValu Extra Virgin Olive Oil
  • 1 bunch SuperValu Fresh Mint
    leaves, chopped
  • 1 bunch SuperValu Fresh Parsley Flat Leaf
    chopped
  • 100 g SuperValu Semi Sundried Tomatoes
  • 800 ml Water
    boiling

Method

  1. Bring a pan of water to the boil and add some salt, pepper and chilli flakes. Pour in the couscous and simmer for 5 minutes. Remove the pan from the heat and leave to settle for a further 5 minutes or until the liquid has been absorbed. Using a fork, fluff the grains to separate. Set aside to cool. 
  2. Transfer the couscous to a large serving bowl. Add the cucumber, sun dried tomatoes, lime zest and juice, mint and parsley.
  3. In a small bowl, combine the cider vinegar and olive oil and drizzle over the couscous. Check the seasoning and gently toss to combine.
