Chicken salad is a familiar favourite, but have you ever thought of using leftover ham in the same way for a sandwich? Or how about mixing it with some cooked macaroni for a cold pasta salad? Give it a try - who knows, it might even become a new favourite!

Ingredients

  • 1 pinch Black Pepper
  • 1 stick Celery finely chopped
  • 2 tsp Dijon Mustard
  • 3 - Eggs
  • 3 tbsp Mayonnaise
  • 1 pinch Salt
  • 350 g SuperValu Cooked Ham (leftovers) finely diced
  • 1 tbsp SuperValu Fresh Parsley chopped
  • 2 - SuperValu Scallions finely chopped
  • 8 slices Wholemeal Bread or 4 pittas or bread rolls

Method

  1. Place the eggs in a large saucepan and cover with cold water. Cover the pan with a lid and bring to the boil. As soon as the water boils, remove the pan from the heat, still covered, and set a timer for 10 minutes. When the 10 minutes are up, remove the eggs from the pan with a slotted spoon and run under cold water to stop them from cooking any further.
  2. When they're cool enough to handle, peel the eggs, then roughly chop them and add them to a bowl with the rest of the ingredients. Stir everything together until well combined.
  3. Divide the ham salad between the bread, pittas or bread rolls. Pack into an airtight container or ziplock bag for lunch.
  4. Pack the ham salad sandwiches with fresh fruit, such as sliced apple, a peeled and segmented clementine, a small banana or a handful of grapes, a yogurt pot for the dairy element of the lunch and a bottle of cold water or unsweetened fruit juice.
