The cheese has a fine creamy texture and a full bodied flavour. Hand rolled in food grade charcoal which promotes good ripening moulds which further enhance the flavour.
Siobhán Ní Gháirbhith makes this full-bodied goat’s milk cheese just south of the Burren in Co. Clare. A multiple award winner, it’s beautiful in a salad served up with an Alsace white wine.
St Tola Ash Log goes extremely well on a cheese board or in a salad accompanied with a fresh Alsace wine.
