Method
In a pot of boiling water, put the rice and cook until light and fluffy.
In a medium bowl beat the egg white with a fork until slightly frothy. Beat in the five spice powder, 1 tablespoon corn flour, flour and pepper.
Stir in the pork so that each piece is coated.
To make the sauce mix the soy sauce, vinegar, sugar, tomato puree, 1 teaspoon cornflour blended with water, and the stock and set aside.
Place the oil in a wok on medium to high heat. Add in the pork cubes and stir fry for about 5 minutes until the pork is no longer pink.
Now add the garlic, ginger, spring onion, peppers and carrots and stir fry for 2 - 4 minutes.
Now pour in the sauce and continue to cook until vegetables are tender and pork is cooked through.
