Originating in Japan and more recently bred in Australia, ‘Wagyu’ (meaning ‘Japanese Cow’) refers to any of four Japanese beef breeds which are genetically predisposed to intense marbling and producing a high percentage of unsaturated fat. In recent years, Wagyu has become a beef breed famous for its consistent high quality and held in high regard by chefs across the world. It is sold in some of the best restaurants in the world. Wagyu beef is renowned for its high levels of marbling, tenderness and unique flavour.
All our Wagyu beef will come from a Bord Bia approved farm in County Wexford. The beef will be matured for a minimum of 21 days.
