Method
To make the traditional stuffing, melt the butter in a large frying pan over a medium heat and add the onion. Sauté the onion for 3 to 4 minutes, until softened and translucent but not coloured.
Meanwhile, put the breadcrumbs and herbs in a large bowl, ensuring the herbs are evenly mixed through. Season to taste. Pour the heated butter and onion over the breadcrumb and herb mixture.
To make the Toonsbridge and sausage meat stuffing, follow the instructions as above, but add the mozzarella, sausage meat and cranberries to the breadcrumb mixture.
If you are using the stuffing for the turkey cavity, make sure the stuffing is cool before placing it in the turkey.
