  • 1.5 tbsp Balsamic Vinegar
  • 30 g Parmesan Cheese grated
  • 10 - Pitted Olives
  • 2 tbsp Rapeseed Oil
  • 1 - Red Onion thinly sliced
  • 250 g SuperValu Baby Potatoes
  • 140 g SuperValu Baby Spinach washed and dried
  • 100 g Tomatoes chopped
  • 260 g Tuna packed in water, drained and flaked


  1. In a pot of boiling water, place potatoes and simmer until cooked.
  2. In a bowl toss the onion with vinegar. Let stand for 5 - 10 minutes.
  3. Add oil to onions and vinegar.
  4. Toss the baby spinach, tomatoes, tuna, and olives with the onion mixture.
  5. Slice the cooked potatoes and add to the salad.
  6. Sprinkle the grated parmesan on top of salad.
