Placki are blinis’ Polish cousin. They have the same flat, round shape and size as blinis. You can make them from potatoes and onion to have with savoury things. This version has been re-imagined with spiced pumpkin.

50gPlain Flour
1tbspRapeseed Oil
10 - SuperValu Blackberries
to serve
0.5tspSuperValu Ground Nutmeg
200gSuperValu Pumpkin
peeled, deseeded and finely grated, or use potato or tins of pumpkin instead
2tbspSuperValu Sour Cream
plus extra to serve
Method
Combine the pumpkin with the flour, soured cream and spices.
Heat a little rapeseed oil in a frying pan. Once hot, place a tablespoon of batter in the pan and flatten it out. Fry four or five pancakes at a time for 3 to 4 minutes on each side. Keep them warm in the oven until ready to eat.
Serve three or four placki on each plate with some extra soured cream and fresh blackberries on the side, with some toasted almonds and a drizzle of honey on top.
