Slow-Cooked Red Cabbage with Star Anise and Apples

Ingredients
0 - Black Pepper
20gButter
1 - Cinnamon Stick
70gMuscovado Sugar
1tbspOlive Oil
50gRaisins
100mlRed Wine
40mlRed Wine Vinegar
3 - Shallots
diced
2 - SuperValu Pink Lady Apples
chopped
0.5headSuperValu Red Cabbage
cored and shredded
0 - SuperValu Salt
2 - SuperValu Star Anise
Method
Heat the butter and oil in a saucepan over a medium heat. Add the shredded cabbage and shallots and sauté for about 5 minutes, until they have slightly softened.
Add the rest of the ingredients and season with salt and pepper. Cover the pan with a lid and cook for 2 to 3 hours over a very low heat. Remove the star anise and cinnamon stick before serving.
