Sausage Casserole and Mash Sausage Casserole and Mash

  • 6 - Mushrooms quartered
  • 1 - Red Onion
  • 1 - SuperValu Carrot
  • 1 tin SuperValu Chopped Tomatoes 400g tin
  • 6 - SuperValu Rooster Potatoes peeled and cut into chunks
  • 492 g Superquinn Award Winning Irish Sausages

From your Store Cupboard

  • 1 tsp Chilli Powder
  • 50 g SuperValu Butter
  • 1 tsp SuperValu Dried Mixed Herbs
  • 4 cloves SuperValu Garlic
  • 1 tbsp SuperValu Oil
  • 1 pinch SuperValu Sugar


  1. Place the potatoes in a large saucepan and just cover with water.
  2. Bring to the boil and cook for 20 minutes until the potatoes are softened.
  3. Drain to remove excess water.
  4. Mash the potatoes and add some butter and milk.
  5. Season and keep warm.
  6. Heat a large frying pan with a little oil and brown off the sausages until they are golden brown on all sides.
  7. Remove from the pan and set aside.
  8. Meanwhile heat a large wide based saucepan with a little oil, add in the diced onion and garlic and sweat gently until softened.
  9. Next add in the carrot and mushrooms and continue to sauté gently
  10. Pour in the tin of tomatoes and allow the mixture to come to the boil.
  11. Sprinkle in the sugar, dried mixed herbs and the chilli powder and add the sausages to the pan.
  12. Simmer gently for 25 - 30 minutes and serve immediately with mashed potatoes.
