Roast Leg of Lamb with Rosemary & Garlic

  • 700 ml Chicken Stock Cube
  • 3 sprigs SuperValu Fresh Rosemary
  • 3 cloves SuperValu Garlic
  • 1 - SuperValu Onion
  • 2.5 kg SuperValu Quality Irish Leg of Lamb
  • 2 kg SuperValu Rooster Potatoes


  1. Pre-heat your oven to 200°C degrees
  2. Peel and slice the potatoes and lie them in the roasting tin
  3. Slice the onion and scatter over the potatoes
  4. Slice the garlic and pull apart the sprigs of rosemary
  5. Make sharp incisions across the lamb fat and insert the sliced garlic and rosemary into the incisions.
  6. Lay the lamb on top of the potatoes
  7. Pour the chicken stock over the potatoes
  8. Cook in an oven for 1.5-2 hours if you like your lamb rare, or for up to 3 hours if you like it well done.
