Operation Transformation Recipe - Serve this traditional Indian dish with wholegrain rice.

Ingredients

  • 200 g Chopped Tomatoes canned
  • 1 tbsp Curry Paste
  • 1 clove Garlic chopped
  • 400 g Light Coconut Milk
  • 1 large Onion chopped
  • 1 tsp Rapeseed Oil
  • 1 - Red Pepper deseeded and chopped
  • 300 g SuperValu Cod Fillets or any white fish (haddock, etc.)
  • 5 g SuperValu Fresh Coriander chopped
  • 60 g Wholegrain Rice
  • 1 - Yellow Pepper deseeded and chopped

Method

  1. In a pot of water, add rice and bring to the boil. Cook until light and fluffy.
  2. Place oil in a large pan over medium - high heat.
  3. Add the chopped onions. Cook for 7 - 10 minutes until softened and starting to go light brown.
  4. Add the tomatoes, garlic and cook for a further 2 minutes.
  5. Now add the curry paste and coconut milk and chopped peppers and bring to a simmer.
  6. Cut the fish into 1 inch chunks. Add the fish to the curry and simmer gently for 10 - 12 minutes until fish is cooked through.
  7. Place cooked rice on a plate and top with curry mixture. Top with chopped coriander.
