Ham Stuffed Baked Potatoes with Cheese Ham Stuffed Baked Potatoes with Cheese

These hearty potatoes are fully loaded and a great way to use up any leftovers from Christmas.

Ingredients

  • 200 g Creme Fraiche
  • 100 g Ham cubed
  • 100 g SuperValu Mature Cheddar Cheese grated
  • 1 tbsp SuperValu Olive Oil
  • 1 small SuperValu Onion roughly chopped
  • 1 tbsp SuperValu Parmesan Cheese Shavings
  • 4 large SuperValu Potatoes
  • 0 - SuperValu Whole Black Peppercorns

Method

  1. Scrub the potatoes and pierce with a fork.
  2. Bake at 180°C/350°F/Gas Mark 4 for 1 hour or until tender.
  3. When the potatoes are cool enough to handle, cut a thin slice off the top of each potato and discard.
  4. Scoop out the pulp, leaving a thin shell.
  5. In a large pan, over a moderate heat, sauté the ham and onion in oil until the onion is soft.
  6. Set aside.
  7. In a large bowl, mash the pulp with crème fraîche, salt and pepper.
  8. Stir in the ham mixture, cheddar and Parmesan.
  9. Spoon into potato shells.
  10. Place on a baking sheet and bake, uncovered, at 180°C/350°F/Gas Mark 4 for 25-30 minutes, until heated through.
