In this recipe I use hazelnuts, you could easily substitute walnuts or pistachios.
*This recipe makes 15 cookies.
1. Preheat the oven to 180°C/gas mark 4. Line two baking trays with non-stick baking paper.
2. Sift the flour, baking powder and a pinch of salt into a large bowl, then add the chocolate, butter, sugars, hazelnuts, beaten egg, golden syrup and vanilla. Combine all the ingredients until it forms a wet dough. Using a dessert spoon, spoon some dough onto the lined tray, spaced well apart. Each spoonful should form a 3cm round.
3. Bake in the oven for 10 to 12 minutes, until browned. Allow to cool on a wire rack, then store in an airtight container.
