Description
Taking inspiration from Dutch Edam, this hard French cheese has sweet, caramelised flavours and a lovely smooth, fudgy finish. Mimolette’s other striking feature is its bright orange colour, derived from the use of annatto during production. The name derives from a ripening cellar in the city of Lille, where the cheese was originally matured. Try it with a little Calvados for an extra treat.
Pairing Recommendations
Mimolette is excellent on a cheeseboard or it can also be used for grating. Paired with a citrusy Melon wine, or a Sangiovese Chianti it is a perfect afternoon treat.
