BBQ Glazed Salmon Darnes with Spiralised Vegetables

Ingredients

  • 4 tbsp Barbecue Sauce
  • 200 g Butternut Squash
  • 2 - Carrots
  • 2 tbsp Fresh Oregano
  • 2 tbsp Olive Oil
  • 4 - Salmon Darn
  • 1 pinch Salt and Pepper
  • 2 - Shallot
  • 1 tsp Thyme

Method

  1. Preheat oven to 180˚C.
  2. First, spiralise the butternut squash, courgette and carrot and place in a large bowl.
  3. Add the shallots, herbs, olive oil, salt and pepper and toss to combine and coat the vegetables. Transfer the vegetables onto a roasting tray and lay the salmon pieces over the vegetables.
  4. Drizzle the barbecue sauce onto the salmon pieces. Place in the oven and roast for 18 - 20 minutes until the salmon is cooked
    through.
  5. Serve immediately.Garnish with oregano and enjoy!
