Rívesci

Rívesci {Ree-vessy} was founded in September 2019 by Tipperary native Shannon Forrest and Declan Malone hailing from Laois. From a Michelin Star kitchen, hotels and cafés, Declan finally wanted to have his own business alongside his fiancé Shannon and hence Rívesci was born in the heart of rural Tipperary. Life in a vintage caravan has taken them to Ballymaloe, Dunbrody House, Applefest Abbeyleix, Savour Kilkenny and Clonmel Applefest. Their street food focuses heavily on vegetarian and some vegan dishes where local suppliers reign supreme, are name checked on their menu and included in their condiments, some of whom are also part of the Supervalu Food Academy family. This focus on local Tipperary and other Irish Artisan food producers is imperative to Declan and Shannon as they both feel supporting local and supporting Irish are the key to a sustainable and thriving economic environment.

With so many customers asking them what condiments they use on their dishes, Declan and Shannon saw an opportunity to produce their Cashew Chilli Crush and Red Onion Marmalade with Spiced Port in jars selling directly to their consumers where they trade weekly in Clonmel, Co.Tipperary.

Shannon also applied for the Food Academy Start programme and the whole process cemented their decision in wanting to pursue getting listed with Supervalu and their Food Academy. Supervalu has given Rívesci an opportunity that they once felt was totally out of reach. The condiments are made in small batches by hand to ensure the flavour and quality is consistent in keeping with Declan's high standards.
