Nancy's Fancies
My name is Jennifer Simpson, and I am the sole founding member of Nancy’s Fancies. I established this business in 2021, situated in the historic town of Cahir, Co. Tipperary. Over the past year, I have been diligently working to grow my business, experiencing both the highs and lows that come with it, but relishing in the process. Baking has always been my passion, instilled in me by my grandmother Nancy, to whom I am eternally grateful. She believed in natural, tasty treats, and I have carried this ethos into my business. My products offer a modern twist on Nancy’s classic bakes, including a raspberry & white chocolate blondie and a hazelnut cream brownie. All items are homemade, with no added preservatives or chemicals, and are produced in small batches in Cahir, just as Nancy would have liked.
As the business expands, I aim to invest in an electric van, as sustainability holds great importance to me. I already implement sustainable practices such as having a compost bin and recycling wherever possible. Making small changes along the way will help my business become more sustainable as it grows. The Food Academy has been instrumental in the growth of my business, providing numerous opportunities and invaluable guidance. They have helped elevate my brand to the next level and provided a wealth of knowledge throughout the journey. It has been a truly amazing experience.
As I continue to expand, I hope to create new jobs in my locality and support others in my area as best I can.
