Kellys Meat Store
Kelly’s Meat Store was opened as “The Pork Shop” in 1948 by my grand-father, Jackie Kelly. He concentrated solely on pork and pork products, including his unique, now famous, sausages until the late 1960s, when he expanded into beef, lamb and poultry.
His sausages, which we are still producing today, became famous across the Mid-West and in particular in Limerick City, where during the 70's & 80's, butcher shops in central Limerick were retailing them weekly.
We produce all our own sausages at our premises here in Kilrush by traditional methods using only Irish sourced ingredients. All pork used in our sausages is sourced from Bord Bia approved pork producers. Our seasonings are mixed in-house from ingredients milled & processed in Limerick. We use Natural Casings on the majority of our sausages and again, these are sourced in Ireland.
As a result, we have consistently been National Champions/Finalists of Associated Craft Butchers of Ireland, Sausage & Pudding Competitions since their re-incarnation in 2001.
I spent a year, 2013, after finishing college with Kepak in Cork getting broader experience of the meat industry, before returning home to head up this new project with SuperValu.
My father has been involved at all levels of the industry since leaving College in 1982.
As the third generation of Kelly’s Meat Store, I am proud to have the opportunity to carry on this great tradition, and hopefully someday be looking at the fourth or fifth generation preserving and improving on what we have done before them.
I went through the Food Academy programme during the Autumn of 2015, and we started our first deliveries in January 2016.
By consistently doing promotions we have got our brand out there in the public eye and it is slowly being recognised in more stores as each month passes.
Our sausage production has increased considerably as a result of our participation in this programme, leading to the creation of 2 more jobs at our business.
