Nestled between Lough Mask and Lough Corrib, in the heart of the Gaeltacht village of Clonbur, is an award-winning artisan bakery that blends global influences with local traditions.
We began our journey in 2020, during the COVID-19 pandemic, as two friends baking in a commercial kitchen at the Petersburg Outdoor Education Centre, delivering locally through an online shop. As demand grew, we started supplying local shops, and by 2021 we took the leap and opened our doors in Clonbur. It was a bold step in a village that once thrived with around 15 shops in its heyday.
Our bakery occupies part of the space where our landlord’s family once ran O’Donnell’s, a hardware store that sold everything from wellies to bananas. We repurposed much of the original furniture, including the store’s sign frame and the counter from the old post office across the road. From our ovens to our furniture, everything has been sourced second-hand, reflecting our commitment to a circular economy.
Sustainability is at the heart of everything we do, from our ingredients and production methods to the work culture we’ve built. We use natural ingredients, sourcing locally and foraging whenever possible, alongside regeneratively farmed flour. Our small-batch production embraces a slow baking process—our sourdough, for example, ferments for two days, nurtured by the fresh air from the nearby Clonbur woods.
Being so closely connected to nature, we weave the changing seasons into our baking, using seasonal ingredients and recipes that reflect the rhythms of the land.
We are proudly a 100% female-owned business, with a close-knit, multicultural team. Creating a positive, sustainable work environment has always been a priority for us—one where ideas and creativity are encouraged, and where work brings both joy and purpose. Innovation is at the heart of our bakery. While our Gold award-winning teabrack and traditional brown soda bread remain beloved staples, you’re just as likely to find a sourdough baguette or a slow-fermented Borodinsky sourdough in our selection. Joyce Country Bakery is where tradition meets a modern twist.
