Fully Free

At Fully Free, our journey began with a personal challenge that evolved into a deep passion. My wife, Suzanne, has severe food allergies and cannot eat dairy. But we both love cheese and giving it up was never an option. With over 20 years of experience in the food industry, I set out to create not just an alternative, but a true replacement—delicious, live-cultured, aged cheese made entirely from cashew nuts. 

My background in food and hospitality provided the expertise to experiment and refine my recipes, but it was our personal need that fuelled the mission. The result? Handcrafted, dairy-free cheeses that deliver the rich, complex flavours of traditional cheese—without compromise. 

Our process begins with making fresh cashew milk, which is then fermented with live cultures to develop its deep, unmistakably cheesy taste. Unlike many plant-based alternatives, we never use oils, starches, or unnecessary additives. Instead, we rely on simple, high-quality ingredients like chives, garlic, paprika, jalapeños, and capers to create bold, flavourful cheeses that stand on their own. Each batch is slow-crafted with care, ensuring every bite meets our high standards for taste and quality. 

Since launching Fully Free, we’ve had the privilege of seeing our cheeses stocked in independent retailers across Dublin, Mullingar, and beyond. Our products have gained industry recognition, winning a Great Taste Award in 2022 and Gold and Silver at the 2023 Free From Food Awards UK—a testament to our commitment to excellence. 

The SuperValu Food Academy has played a crucial role in our journey. The programme has provided us with invaluable mentorship, industry insights, support on product, brand and packaging development. Through the programme we’ve gained a deeper understanding of food production, marketing, and scaling a business, all while staying true to our core values.
