Feta melba toast

RECIPE OVERVIEW

Make these in advance so that they have time to chill and create some chilling time for yourself too.

Ingredients

Serves: 4 people

  • 0 - Black Pepper
  • 100 g Cherry Tomatoes
    halved
  • 1 - Ciabatta Bread Rolls
    cut into 1.5cm crostini, or melba toast
  • 50 g Creme Fraiche
  • 1 tbsp Honey
  • 1 pinch SuperValu Chilli Flakes
  • 125 g SuperValu Feta Cheese
  • 1 bunch SuperValu Mixed Baby Salad Leaves
    lightly dressed
  • 2 tbsp SuperValu Olive Oil
  • 0 - SuperValu Salt

Method

  1. Preheat the oven to 200°C/gas mark 6.
  2. Brush the crostini with a little olive oil. Season with salt and freshly ground black pepper and place on a baking tray. Bake for 10 minutes, until slightly toasted and crisp. Set aside.
  3. Blitz together the feta, crème fraîche, honey, chilli flakes and some seasoning in a blender. Scrape the sides of the bowl and process again until smooth.
  4. Transfer to a serving bowl, sprinkle with chilli flakes and drizzle with honey. Serve with crostini, the halved cherry tomatoes and some lightly dressed baby salad leaves.
